1 ½ cup of raw walnuts, soaked for 1-2 hours
1/8 teaspoon of cayenne pepper
1-2 teaspoons of taco seasoning
2 teaspoons of tamari or other soy sauce
¾ teaspoon of coriander, ground
1 ½ teaspoons of cumin, ground
Place all ingredients in food processor. Pulse on and off until consistency looks like ground burger. Do not over process. Texture should be coarse, not fine.
Serve with romaine lettuce leaves, topped with, tomatoes, sliced avocado or guacamole, olives or any vegetables of your choice and cheese sauce.
Note: After soaking nuts, drain and dry before use.
