Corn Bread

Preheat oven to 400 degrees. Spray a large rectangular glass baking dish or 2 dozen muffin tins.

 

In a large bowl, mix together:

3 cups of cornmeal

3 cups of unbleached white flour

¾ – 1 ¼ cups of Florida Crystals or other sweetener

1 ½ tablespoons of baking powder (no aluminum)

3 ½ teaspoons of salt

1 ¼ teaspoons of cornstarch

 

In a separate bowl, mix together:

3 cups of water or soy milk

1 ¼ cups of oil

 

Pour over dry ingredients and mix well, but lightly. Pour into a sprayed, large rectangular glass baking dish or spoon into the muffin tins. Bake at 400 degrees for 35 minutes.
